Allergy Friendly Kale Creamy Dip

Since I have Lyme disease plus a lot of other conditions, diet is a critical part of my healing process. I tend to crave a lot of foods that I’m not allowed to eat so it’s always nice when I can find a healthy alternative to satisfy that craving.

This recipe fits the bill. It’s allergy friendly, gluten free, dairy free, sugar free, vegan and candida friendly, plus it’s easy to make!

Ingredients

  • 3-4 large kale stalks
  • 1 avocado
  • 1 clove of garlic
  • 4-5 fresh basil leaves
  • Sea salt
  • Black pepper
  • Extra virgin olive oil

Directions

Remove the stem from your kale stalks and chops the kale into bite sized pieces. Steam the kale for 2 minutes. Grab a mixing bowl and add the meat of the avocado to the bowl. Use a potato masher or fork to completely mash the avocado. Chop your basil leaves and add them to the bowl. Use a garlic press and add your garlic to the bowl. Once your kale is done, add it to the bowl along with salt, black pepper, and a quick splash of olive oil. Use a spoon to mix everything together. Correct seasoning if need be.
It’s great to eat with some raw veggies or gluten and yeast free rice crackers and makes a wonderful, healthy snack.
