Quinoa Chicken Salad


Looking for a quick, easy and healthy meal? Look no further. It only takes a few minutes to throw this together and is perfect for those on a low sugar diet or those who are looking to get lots of veggies in their diet. It’s also loaded with protein from the chicken breast and the quinoa.


1 organic chicken breast

1/4 cup uncooked quinoa

2 cups spinach

2 tomatoes

1/2 cucumber

1 avocado

1 garlic clove, minced

diced green onions to taste

juice of 1/2 lemon

2 tbsp olive oil

sea salt to taste



Rinse and cook the quinoa as instructed on the package.

Cook the chicken in a pan with the minced garlic, then dice when finished.

Chop the veggies and toss them with everything in a bowl and serve.
