1 organic chicken breast
1/4 cup uncooked quinoa
2 cups spinach
1 garlic clove, minced
diced green onions to taste
juice of 1/2 lemon
2 tbsp olive oil
sea salt to taste
Rinse and cook the quinoa as instructed on the package.
Cook the chicken in a pan with the minced garlic, then dice when finished.
Chop the veggies and toss them with everything in a bowl and serve.
