Chocolate Protein Cookies Vegan Gluten Free


Who wouldn’t want cookies for breakfast? Well now you can and you don’t have to feel guilty about it! These are vegan and gluten free and would be great for breakfast or a sweet afternoon snack. I always like finding ways to use my bone broth protein powder besides in a smoothie so this fits the bill perfectly. I don’t add any additional sweetener since the protein powder is sweet enough for me, but feel free to add a few drops of stevia if you prefer.

  • 1 scoop chocolate bone broth protein powder (or any of your favorite chocolate protein powder)
  • 2 tablespoons oat flour (ground-up rolled oats)
  • 1 tablespoon unsweetened cocoa powder
  • ½ tablespoon flax meal
  • ¼ teaspoon baking soda
  • ⅛ teaspoon salt
  • 3 tablespoons unsweetened applesauce
  • 2-3 tablespoons almond milk
  • 1 tablespoon almond butter
  • ¼ teaspoon vanilla extract
  • 1 tablespoon dark chocolate chips (I use vegan, sugar free chips)
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, add protein powder, oat flour, cocoa powder, stevia, flax meal, baking soda, and salt. Whisk until all ingredients are combined.
  3. In a small bowl, add applesauce, 2 tablespoons almond milk, almond butter, and vanilla. Stir until fully mixed together.
  4. Pour the wet ingredients into the dry ingredients. Stir until a dough comes together, adding a tablespoon or two more of almond milk if it is too dry. Fold in the chocolate chips.
  5. Form a ball in your hands with the dough and place on the lined baking sheet. Form a round cookie shape about ¼-1/2-inch thick.
  6. Bake for 13-16 minutes, depending on how chewy or crispy you like your cookies. Let it cool on the pan for at least 5 minutes.
