I love finding ways to make cheap but healthy and filling meals. This dish is packed full of fiber, vitamins and minerals plus if you wanted to add more protein, all you have to do is add some fish or chicken. Super easy! And it’s always nice when I can use the ingredients I already have on hand.
1 cup uncooked brown rice
1 1/2 cups stock or water
2 tbsp extra virgin olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 red bell pepper, thinly sliced
1 large tomato, chopped
1 cup canned chickpeas
1 cup frozen green peas
ground black pepper
Cook rice as instructed on package.
In a skillet, saute the onions, garlic, and bell peppers in olive oil until tender.
Add rice, tomato and chickpeas and add the 1 1/2 cups liquid.
Cover and cook on low for 30 minutes.
Add green peas and cook until heated through and all the liquid is absorbed.
Garnish with chopped cilantro, black pepper, salt and a squeeze of lemon if you’d like.
Sometimes I like to add a few artichokes or olives as well, yum!
