Black Bean Quinoa Veggie Tacos


This is a yummy, hearty, vegan main dish for carnivores and herbivores alike (and everyone in between). Great topped with guacamole or avocados, hot sauce, sour cream, cheese, or vegan dairy alternatives.

You’ll get tons of fiber and protein from the quinoa and black beans which will keep you full. You won’t miss the meat!

Makes 4 tacos


  • 1/2 cup quinoa, cooked
  • 1/2 cup canned black beans
  • 1 cup broccoli, steamed
  • 1 tomato, chopped
  • 2 tablespoons salsa
  • juice of 1 lime
  • 4 corn tortillas



1. Combine the quinoa, black beans, broccoli, spinach, tomato and salsa in cast-iron skillet. Stir and simmer until warm, about 5 minutes. Squeeze fresh lime juice over entire mixture.

2. Wrap it up.
